Trivet welcomes Salvatore Geraci of Azienda Agricola Palari for an exceptional evening dedicated to one of Italy’s most revered and sought-after wines. A cult name among collectors and one of the defining expressions of the tiny Faro DOC, Azienda Agricola Palari offers a rare glimpse into Sicily’s historic winemaking heritage, with wines of extraordinary finesse, complexity and longevity.
Based primarily on Nerello Mascalese and Nerello Cappuccio, together with Nocera and other traditional local varieties, Azienda Agricola Palari reflects the old vines, low yields and maritime influence of this unique corner of Sicily.
Azienda Agricola Palari was revived by Geraci in the early 1990s, with the ambition of restoring prominence to a historic wine and denomination that had almost disappeared. Today, the estate comprises around 10 hectares of steep, stone-terraced vineyards around Santo Stefano Briga, in the hills south of Messina, overlooking the Strait of Messina towards Calabria.
Geraci’s work has played an important role in the revival and international recognition of Faro DOC. His work has also extended to Mount Etna, where he produces limited quantities of Etna Bianco and Etna Rosso under the Rocca Coeli label, offering another perspective on his approach to Sicily’s distinctive terroirs.
The evening will begin in Trivet’s Mustard Room with an intimate masterclass led by Salvatore Geraci, exploring the history of Azienda Agricola Palari, the character of the Faro terroir and his approach to winemaking. Guests will have the opportunity to taste a rare selection of back vintages, offering an insight into the evolution and remarkable longevity of the wines.
The masterclass will be followed by dinner, with a menu created by Jonny Lake, showcasing Trivet classics served alongside the wines.
