Trivet Tasting Club: Georgia
Georgia is one of the world’s oldest wine-producing countries, with a winemaking tradition stretching back thousands of years. Situated between Europe and Asia, its diverse landscapes, varied climates, and extraordinary collection of indigenous grape varieties have shaped a wine culture unlike any other.
This tasting will explore the remarkable diversity of Georgian wine, from the powerful, structured reds of Kakheti to the fresh and expressive wines of western Georgia. Guests will discover indigenous varieties including Kisi, Khikhvi and Saperavi, alongside traditional and contemporary approaches that demonstrate the breadth and character of Georgian wine.
At the heart of Georgia's winemaking heritage is the qvevri — large earthenware vessels buried underground and traditionally used for fermentation, maturation, and storage. This ancient technique remains central to Georgian winemaking today, while a new generation of producers is combining traditional practices with a modern understanding of viticulture and winemaking.
The evening will explore Georgia's major wine regions and indigenous varieties, examining the influence of altitude, climate, soils, and winemaking traditions on the character of the wines. From aromatic white varieties such as Kisi and Khikhvi to distinctive expressions of Saperavi, the tasting will offer an in-depth look at one of the world's most fascinating wine cultures.
The menu, created by Jonny Lake, will showcase Trivet's own culinary identity rather than focusing on traditional Georgian cuisine. Each dish has been carefully designed to explore the versatility of Georgian wines and demonstrate how their distinctive character, structure, freshness and complexity can complement a contemporary style of cooking far beyond their traditional cultural pairings.
